Today I'm gonna teach you how to make spicy chicken jambalaya!
Ingredients:
2 boneless chicken breasts - diced
1 red pepper - diced
2 red chillies - sliced
1 large onion - sliced
2 cloves garlic - chopped
1 large tomato - diced
Tomato paste
Paprika
Cayenne pepper
Cumin
Chicken stock
Olive oil
Long grain rice
Salt & pepper
Directions:
- Pour olive oil into a large saucepan.
- Then add garlic and onion.
- Add diced chicken breasts, chillies and spices and fry until cooked
- Add in diced tomato and red pepper
- Fry for a further minute
- Add in chicken stock, tomato paste and rice
- Bring to boil and let it simmer for 20 minutes or until rice is cooked
- Add salt and pepper
- Served
